Stuffed Peppers

Yields 12

Ingredients:
6 Peppers, halved and boiled until turn lighter green
2 pounds ground beef, browned and drained, seasoned with salt and pepper
1/2 roll Hot Sausage, browned and drained
1 large onion, diced and sauted in olive oil and salt and pepper
2-4 cloves of Garlic, diced and sauted in olive oil and salt and pepper
2 eggs
1/2 - 1 cup oatmeal
2 tablespoons dried mustard
1 can corn, drained
1 large can of tomato sauce, 1/2 in bottom of baking pan, 1/2 in meat mixture
1/3 tsp salt in meat, and 1/3 tsp in sauteed onion and garlic
1/3 tsp black pepper in meat, and 1/3 tsp in sauteed onion and garlic
1 tablespoon Olive Oil

Directions:
Brown meat and drain. Sautee onion and garlic in olive oil. Let meat mixture cool. Place in a large bowl. Add sauteed onion and garlic, 2 eggs, oatmeal, dried mustard, corn, and other 1/2 of tomato sauce. Combine all together. In a baking dish spread 1/2 of tomato sauce. Place halved peppers in pan on top of the tomato sauce. Spoon meat mixture into peppers. Bake at 350 degrees for 25-30 minutes covered with tin foil.
