Mexican Chicken (pollo mexicano)


3-4 boneless chicken breasts
1 can re-fried beans
1 can enchilada sauce, red or green
1 can green chilies
8 oz Mexican shredded cheese
chopped onion
chopped mushrooms
Toppings (optional)
chopped tomato
chopped lettuce
sour cream
brown rice
Pre-heat oven to 350 degrees.
Lay chicken breasts on bottom of 9x13 baking dish.
In bowl mix re-friend beans, chopped onions, enchilada sauce and green chilies all together until well mixed. Once all mixed up pour over chicken. Top with shredded cheese. Bake in oven for about 35-40 minutes. Let cool. Top with additional toppings if preferred. Enjoy!

Grilled Chicken Fajitas


¼ cup lime juice (about 3 limes)
1/4 cup extra-virgin olive oil
4 cloves garlic, minced
1 teaspoon salt, plus more for sprinkling
1/2 teaspoon freshly ground black pepper, plus more for sprinkling
4 boneless chicken breast halves, skinned (about 2 pounds) I used Chicken Thighs
4 scallions, tops removed
1 yellow onion, quartered
1 green bell pepper, halved, seeded
1 red bell pepper, halved, seeded
Shredded Cheddar, for serving
Large Portabella Mushrooms
Whisk the lime, oil, garlic, salt and pepper until combined in a small bowl. Place the chicken in a 1-gallon plastic bag. Pour half of the lime mixture over the chicken; turn to coat. Let the chicken marinate in the fridge for at least 2 hours and up to 8 hours.
Preheat the grill to medium-high heat. Remove the chicken from the lime mixture and bring to room temperature. Sprinkle each side of the chicken with salt and pepper. Grill the chicken until cooked through, about 7 minutes each side. Grill the vegetables until tender, turning frequently, about 10 minutes for peppers and mushrooms and about 15 minutes for the onions.
Transfer the chicken to a work surface and cover with aluminum foil. Set aside the chicken for 10 minutes. Meanwhile, slice the onions and peppers and mix together. Slice your chicken into strips. Serve with the Cheddar and sour cream.
I love this recipe. I throw everything onto my grill and it quick and easy! I top the mushrooms with the chicken mixture. You could also use a low carb tortilla.Top it with plain greek yogurt and cilantro

Caramel Popcorn


1/2 cup butter or margarine
1 cup brown sugar
1/2 cup light corn syrup
1/2 15 ounce can sweetened condensed milk
1/2 teaspoon vanilla
5 quarts popped corn
In saucepan, combine butter, sugar, and corn syrup. Stir well and bring to boiling over medium heat. Stir in condensed milk; simmer, stirring constantly, till mixture comes to soft ball stage (about 234 to 238 degrees). Stir in vanilla. Pour over popped corn and stir to coat. You can then form it into balls or just leave it. I pour mine out onto sheet pans.
This is a gooey caramel popcorn, not a crunchy one. I have never done one that you put in the oven. And I never use a candy thermometer so it may turn out less gooey if it were the right temp. lol I just wing it.

Oh how I love a good cookie! Don't these look "melt in your mouth" delicious?!!


SOFT SUGAR COOKIES
You can decorate them however you like!
Ingredients:
COOKIES
3/4 cup (170g) unsalted butter, slightly softened to room temperature
3/4 cup (150g) granulated sugar
1 large egg
2 teaspoons vanilla extract
1/4 teaspoon almond extract (makes the flavor outstanding)
2 and 1/4 cups (281g) all-purpose flour
1/2 teaspoon baking powder
Directions:
In a large bowl using a mixer, beat the butter until creamed and smooth - about 1 minute. Add the sugar and beat on high speed until light and fluffy, about 3 or 4 minutes. Scrape down the sides and bottom of the bowl as needed. Add the egg, vanilla, and almond extract and beat on high until fully combine, about 2 minutes. Blend well.
Whisk the flour and baking powder together in a medium bowl. Turn the mixer down to low and add about half of the flour mixture, beating until just barely combined. Add the rest of the flour and continue mixing until just combined. If the dough still seems too soft, you can add 1 Tablespoon more flour until it is a better consistency for rolling.
Divide the dough into 2 equal parts. Roll each portion out onto a piece of parchment to about 1/4″ thickness. Stack the pieces (with paper) onto a baking sheet and refrigerate for at least 1 hour and up to 1 day. Chilling is mandatory.
Once chilled, preheat oven to 350F degrees. Line 2-3 large baking sheets with parchment paper or a silicone baking mat. The amount of batches will depend on how large/small you cut your cookies. Remove one of the dough pieces from the refrigerator and using a cookie cutter, cut in shapes. Transfer the cut cookie dough to the prepared baking sheet. Re-roll the remaining dough and continue cutting until all is used.
Bake for 8-11 minutes, until very lightly colored on top and around the edges. Make sure you rotate the baking sheet halfway through bake time. My cookies took 9 minutes. Allow to cool on baking sheet for 5 minutes, then transfer to a wire rack to cool completely before icing. I always let mine cool overnight, just to be sure.
Make the icing and decorate the cooled cookies however you'd like. Once the icing has set, these cookies are great for gifts, sending, or munching on right away. I find they stay soft for about 5 days at room temperature.
Icing for DECORATING
Ingredients
Original recipe makes 1 dozen cookies' worth
1 cup confectioners' sugar
2 teaspoons milk
2 teaspoons light corn syrup
1/4 teaspoon almond extract
assorted food coloring
Directions
In a small bowl, stir together confectioners' sugar and milk until smooth. Beat in corn syrup and almond extract until icing is smooth and glossy. If icing is too thick, add more corn syrup.
Divide into separate bowls, and add food coloring to each to desired intensity. Dip cookies, or paint them with a brush.

Phyllis's Strawberry Cotton Candy Salad


Ingredients:
1 can sweetened condensed milk
2 cups crushed pineapple, well drained
1 cup strawberry pie filling
12 oz tub cool whip
8 large strawberries, halved
3/4 cup pecans, chopped
Fold all ingredients together. Chill and Serve. Enjoy!

Easy Mexican Casserole


1 pound lean ground beef
1 can Ranch Style beans
1 10-12 ounce bag Doritos, crushed
1 can Ro-tel tomatoes
1 small onion, chopped
2 cups shredded cheddar cheese, divided
1 package taco seasoning
1 can cream of chicken soup
1/2 cup water
1/4 cup ketchup (optional)
sour cream and salsa for serving
Preheat oven to 325 degrees. In a skillet, brown meat and drain off fat. Stir in beans, tomatoes, onion, taco seasoning, soup, ketchup and water. Simmer over medium-low heat until everything is well combined and heated through.
Spray a 9×13 casserole dish. Put down a layer of crushed tortilla chips, followed by a layer of the meat/bean mixture, then half of the cheddar cheese. Repeat layers. Cover with foil and bake for 20-30 minutes, or until bubbly.
Let sit for 5-10 minutes before serving. Top with sour cream and salsa!

ADULT YUMMIES! Pumpkin Fire Pudding Shots
Ingredients:
Sm Pumpkin Spice Instant Pudding
¾ c Whole Milk
¾ c Fireball Whiskey
8 oz Cool Whip (Extra Creamy preferred but not required)
Directions:
Whisk Whole Milk & Instant Pudding together until as thick as it will get (1-2 minutes). Once it has thickened, add Liquor and whisk until all lumps and clumps are gone. Once the mixture is nice and smooth again, whisk in Cool Whip.
Fill almost ¾ of a 1 oz plastic shot cup with the mixture then cover and place in the freezer.
It does take several hours to set. For BEST results, I let them set overnight. May use little ice cream tester spoons when serving them.

Fast and Easy No Bake Cherry Cheese Cake
So yummy!!!!!
1 prebaked pie shell, I like graham crust
For bottom cream cheese layer..
1 8oz block cream cheese, room temperature
3/4 cup icing sugar
1 1/2 tsp vanilla
3/4 cup cool whip, or sweetened whipped cream
Mix well, and spread on the bottom of pie shell
top with...
1 package instant vanilla pudding mixed with 1 1/2 cups milk.
Spread 1 cup cool whip or sweetened whipped cream on vanilla layer.
top with canned cherries or any other fruit filling.
Let refrigerate an hour before serving.

Yvie's creamy mushroom, garlic and red wine sauce.
Mushrooms (any type you wish) about 2 cup or less.
3 cloves garlic.. 1 onions.. basil.. parsley.. sage.. 250g Philadelphia cooking cream.. 1 litre beef stock..olive oil.. good few splashes of red wine mmm
Method:
Saute onions and garlic in olive oil little.. add finely chopped mushrooms saute till tender.. then add half of the stock and half cream.. good few splashes of good red wine.. let simmer little till reduced.. then I add the parsley.. sage.. basil...season with salt and pepper.. then the rest of the cream and stock.. cook till it reduces and thickens.. yumm so rich and creamy..use your creative imagination to put whatever herbs you like. Nice served on a juicy thick steak!!

MEATBALL SUB CASSEROLE


If you want to cut out some of the carbs, you could make it without the bread! Or just do not eat the bread
1 bag of frozen meatballs 
1 jar of marinara sauce or spaghetti sauce
1 1/2 cup shredded Italian blend cheese
1 1/2 cup shredded mozzarella cheese
1/2 cup Parmesan cheese, shredded
1 box of Texas Toast Garlic Bread (Pepperidge Farm) OR a loaf of fresh sliced garlic Italian bread (Walmart carries it)
Garlic Powder
Onion Powder
Salt & Pepper
Preheat oven to 400.
Put bag of meatballs in pot with sauce. Add garlic powder, onion powder, salt & pepper to taste)
Cook over medium heat for 10 minutes or until warmed completely through.
Stir as needed to keep meatballs from sticking to pot. Once heated through remove from heat.
Place meatballs in the center of a 9x13 baking dish, layer mozzarella and Italian blend cheeses over meatballs topping off with the Parmesan.
Take the slices of Italian bread and line the pan all the way around with them so that they are kind of keeping the meatballs toward the center of the pan. (The bread slices will be standing up in the pan as shown in the picture) You have freedom here with the bread...you can lightly butter and garlic the bread prior to placing it in the pan if you prefer or even brush lightly with olive oil and garlic. The choice is yours.
Place in oven and bake for approximately 20 minutes or until cheese is melted and bubbly. Remove from oven, serve and enjoy!

Hobo Casserole



I adopted this recipe and found it to be the perfect comfort food on a "I really don't want to bother cooking" kind of day. It used basic ingredients that are always in my pantry and freezer, and couldn't be more simple to prepare. It isn't a pretty dish, but it is hearty and filling.

1 lb lean ground beef
1 small onion
2 medium potatoes, sliced
4 slices American cheese
1 (10 3/4 ounce) can cream of mushroom soup
1/8 cup milk
1 1/2 cups French-fried onions
salt and pepper, to taste

Preheat oven to 350°F.
Pat ground beef into 8x8 pan and sprinkle with salt and pepper.
If using, slice onion on top of beef.
Slice potatoes onto onion layer, salt and pepper.
Layer with cheese slices.
Mix soup and milk together and spread over cheese.
Cover with aluminum foil and bake for 1 to 1 1/2 hours or until potatoes are tender.
Remove foil and top with french fried onions and brown for about 5 minutes

Baking Soda Cleaner

So I have heard of this trick working on stove tops and baking sheets. Why not try it on my super stained sink?
I did and look at the results!!!

Here is what I did....

I got the sink completely wet. Then I took and sprinkled baking soda over the entire area that needed cleaning. I let it sit maybe 2 min (because I was too anxious to wait any longer). Then I got my fingers wet and began moving in a circular motion to make a scrubbing effect. Keep fingers wet when they get dry, but not too much water on the paste. Once I had gone over the entire area, I rinsed it out to see the results. Now you can see it too!

During: Showing the layer of baking soda and then the area I had scrubbed with fingers (no other scrubbers are needed). You can see the dirty paste here as well while it was doing its job.

After: Showing how nice and clean it came out. It can use another application. However, you can see it was a great success!

This is something you will want to experiment with as well. So what is first on your list?!

Well everyone this is another update 12 months on Skinny Fiber due to being hospitalised for Pneumonia In September 2013 and only now being allowed to exercise again and have been back on skinny fiber for 3 days another 2kgs gone already woop woop!! Treat recipe of the day!


This is for all you PUMPKIN LOVERS!!!! This will be a new favorite!!
PUMPKIN DUMP CAKE
Serve with a dollop of whipped cream!
Ingredients:
1 box yellow cake mix, (mine had added pudding)
15 ounce can of pumpkin
2 eggs
12 oz whole milk
2/3 cup sugar
1 tsp. cinnamon
1/2 tsp. ginger
1/4 tsp. ground cloves
1/2 tsp. salt
1/2 cup grated butter, (freeze to grate)
1/2 cup chopped pecans, or walnuts (optional)
Directions:
Preheat oven to 350*
In a medium bowl add all the wet ingredients, eggs, pumpkin and milk,
and beat them together with a mixer for about 1 minute.
Add the sugar, and other spices, and salt to that mixture, and mix again.
In a 9 x 13 baking dish, sprinkle 1 cup of the cake mix evenly over
the bottom of the pan. Carefully pour the pumpkin mixture over the
cake mix in pan. Top with the remaining cake mix evenly. If using nuts,
sprinkle over the cake mix. Grate 1/2 cup butter evenly over top of cake
mix, and sprinkle a little cinnamon sugar over the top.
Bake for 40 to 45 minutes. Insert a toothpick to make sure the pumpkin
is cooked in the middle.
Delicious hot or cold. Serve with a dollop of whipped cream,

Ok so I came up with this recipe tonight and well hubby says I should patent it they are the BEST wings he has ever had Hope you enjoy these as much as my Fam did its for 12 wings but I did 12 at a time ~Enjoy~
Lisa's awesome chicken wings
I did 12 at a time so I made this for each batch of 12
2 tablespoons cornstarch
1 tablespoon Sugar
1 teaspoon Salt
1 teaspoon garlic ( I used granulated garlic)
1 teaspoon paprika
1 teaspoon Basil
1 teaspoon La Grille Barbecue Chicken spice
1 teaspoon pepper
Preheat over to 350
Mix all dry ingredients in a bowl large enough to toss chicken wings. Add wings and toss until evenly coated. Arrange wings on a baking sheet lined with tinfoil and sprayed with cooking spray. Continue till you have all your wings coated. Bake for about 1 hour

Look at Becky


Here I am - me, Becky, on day 90. I am thrilled with my Skinny Fiber results! Minus 20 pounds and 18 gone!
What I changed: I swapped water for soda (pop here in Michigan). I tried to choose more wholesome foods for myself. I used my treadmill off and on (mostly off but I'm working on that). Most importantly, I took my Skinny Fiber consistently (2 supplements 30 minutes before my two largest meals with at least 16 ounces of water daily).
What changed in me: I lost pounds and inches. My cholesterol went down to a normal range (finally). My fasting blood sugar also went down to a normal range. I am no longer worried about being pre-diabetic. My knee pain is greatly reduced. I can walk faster than I have in years. (At the beginning of January I was using a cane!) I stopped craving sugary foods and junk food. Did I mention I lost 20 pounds and 18 inches? My clothes are so loose! Friends are telling me that I need to go clothes shopping!
Surprises: I DON'T miss Diet Pepsi! And when I eat, I get full so much more quickly. I no longer go back for second helpings. I have been able to stay on the Skinny Fiber plan for three months - it's so easy! I feel better than ever! I signed up to do a 5K - first time EVER!
I really am pleased with the changes in me. I am so glad I found Skinny Fiber. My plan now is to continue with Skinny Fiber. I will be starting another 90 Day Challenge and will be posting my results.

Mix hot water with 2 tablespoons honey, 2 tablespoons vinegar, a dash of cinnamon (optional) and 2 tablespoons of lemon juice. Mix well and drink. You will feel better within an hour. Works every time. Repeat as needed.

OMGosh ...SO GOOD!!!! CaRaMeL aPpLe CuPcAkEs



Cupcakes You will need:
3 Cups flour
1 Cup Sugar
1 Cup Brown Sugar
1 tsp Baking Soda
1 tsp Salt
1 TBsp. cinnamon
3 Eggs
3/4 cup vegetable oil
3/4 cup Sour Cream
2 tsp vanilla
2 cups of peeled, chopped apples

Pre heat oven to 350 and put your cupcake liners in pans
*Combine dry ingredients: flour, sugar, brown sugar, baking soda, salt and cinnamon.
*Add wet ingredients : eggs, vegt. oil, sour cream and vanilla.
using a wire whisk mix well
*Add your chopped apples
*Fill your cupcakes liners about 2/3 full
*Bake 18-22 min.... insert toothpick to check if done
*Let cupcakes cool for 5 min. in pan then finish cooling on a wire rack
*Frost with Caramel Buttercream when cool

For The Icing:
1 stick of butter
1 cup brown sugar
1/3 cup of heavy whipping cream
3 1/2 cups of powdered sugar
*Melt butter over med heat
*Stir in brown sugar and heavy cream...stir over med heat till sugar dissolves approx 2 min.
*Pour in mixing bowl
*Add powdered sugar a cup at a time..mix with electric mixer
*Frost cupcakes...to make dome look use an offset spatula to frost...put frosting in center and pull downward
*************************************
Caramel Glaze
1 14 oz pkge of Kraft Caramels
2/3 cup of half-and-half
*Microwave caramels and half and half on high for 3 to 4 min. until caramels are melted... stir after each min.
*Allow caramel to cool for 1 -2 mn.
*Dip Frosted cupcake into bowl of caramel

To Garnish
I used shisk a bob sticks or you could use popsicle sticks
Sprinkles
Candy Corn
Chopped nuts or pecans
Or whatever your heart desires
I tied a piece of rafia around each stick but you could use ribbon and even put them in a treat bag and tie a ribbon on each one
* I would do one cupcake at a time on garnishing...dip it in your caramel and top with desired garnish....then do your next one...
