Chicken Artichoke Dip Casserole


INGREDIENTS

    • 2 cups long grain white rice
    • 3 1/2 cups water
    • 1 tablespoon chicken bouillon granules or 2 chicken bouillon cubes
    • 1 (14 ounce) cans artichoke hearts, packed in water, chopped
    • 3/4 cup light mayonnaise
    • 3/4 cup parmesan cheese
    • 1/2 teaspoon garlic powder
    • 10 ounces button mushrooms, sliced
    • 1/4 cup dry white wine
    • 1 tablespoon olive oil
    • 1 1/2-2 lbs boneless skinless chicken breasts, cubed
    • salt and pepper

DIRECTIONS

  1. Prepare a large casserole dish with non-stick cooking spray.
  2. Dissolve the chicken bouillon in the water. Cook the rice in the chicken stock on the stove, or in a rice cooker. When rice is finished cooking, spoon into the casserole dish in an even layer.
  3. In a medium skillet, saute the mushrooms in the olive oil. When mushrooms have softened, add the white wine, and continue to simmer for three to four minutes.
  4. In a medium bowl, combine the chopped artichoke hearts, mayonnaise, Parmesan cheese, garlic powder, and mushrooms (with the juices from the pan). Mix well.
  5. Salt and pepper the cubed chicken breasts to taste. Layer the chicken on top of the rice in the casserole dish.
  6. Spread the artichoke and mushroom mixture over the chicken.
  7. Sprinkle additional Parmesan cheese over the top, if desired.
  8. Bake at 350 degrees for 30-40 minutes, or until chicken is cooked through, and the top becomes bubbly and golden brown.

We are not promised a perfect life.. ya know life without turmoil and stress....but we are promised is Faith Hope and Love... the way we re act to adversity is what sets us apart.. Oh trust me I have had my share of disappointments...now I could have reacted to some of them in the same way the person was acting.. but NO that makes me well like them.. stoop to their level... Forgiveness and Love is the only way to handle people ... if they have wronged me... Trust me... I NEVER forget... but I can forgive... because of their ways, I will not let it stop my destiny .. so I have to forgive... BUT I don't have to ever speak to them or TRUST them again..... its forever shattered.. Gone... not my place to judge or try to change or control them.. Move on... Head held High knowing God has taught me a lesson that no man can take from me..thru our storms in life we are taught so much and we can share to help others... So if you are feeling down cause someone you trusted has shattered that trust...know that their is Peace and Joy in forgiveness

Southern Comfort News Years Punch From Glass Half Full


  1. Get punch bowl.
  2. Add one container of frozen orange juice (any brand will do). It can still be slightly frozen because I think that makes the punch colder and it will thaw eventually.
  3. Add one container of Minute Maid Limeade. I always use Minute Maid Limeade because it just tastes better.
  4. Add some Cranberry Juice Cocktail--classic Ocean Spray works best. Don't use real cranberry juice. This is no time to try to be healthy. I like the punch to have a pinkish orange color, so I add enough cranberry juice to achieve that look.
  5. Add Southern Comfort. Use your judgement here. No matter how much you add, it will pretty much taste the same. So you decide how drunk you want people to end up and how much of your precious alcohol you want to use. Southern Comfort is relatively cheap and I like people to have a good time, so I add a lot.
  6. Add a bunch of ice or an ice ring. You've made this pretty strong and the juices are pretty sweet, so it can handle a lot of melting ice without losing any of the flavor.
  7. Add a can or two of 7-Up before serving. The fizz makes it good, that's why I add it as close to guest arrival time as possible.
They say what you are doing on the first day of the new year will pretty much predict how that year will go for you. So what better symbolism for the year to come than the abundance of a bowl of punch shared with people you love.Wishing you joy and abundance in 2015!

Ahhhhhhhhhhh After a Long Day of Shopping or Shoveling Snow..

You will Need:
A container
Towel To dry your feet
In the Mix:
2 cups of White Vinegar
2 Cups of Blue Listerine
4 Cups of Warm Water
Mix together and Get Cozy and Soak for at least 10 mins... Ahhhhhhhhhhhhhhh

Here is a great tasting roast that is so easy.....


 3 Envelope Roast
Ingredients:
3 pound beef roast such as chuck roast
1 envelope of dry Italian salad dressing mix
1 envelope of dry ranch salad dressing mix
1 envelope of dry brown gravy mix
2 cups water
1 medium onion diced
Instructions :
Put the water in a measuring cup that is larger then the amount of water you are using. Now add and mix all three envelopes to the water. Mix until blended completely.
Brown the roast (if desired). Add the meat to your slow cooker. Pour the water, salad dressing mixture over the roast. Add onion on top of the roast. In the slow cooker cook it on high for about 4 hours on low about 8 hours.

Some thoughts as we enter the holiday season ...


It is important to remember that not everyone is surrounded by large, wonderful families. Some of us have problems during the holidays and sometimes are overcome with great sadness when we remember the loved ones who are not with us. And many people have no one to spend these times with and are besieged by loneliness. We all need caring, loving thoughts right now. May I ask my friends wherever you might be, to kindly share this status to show help raise awareness & show understanding to all those who have family problems, health struggles, job issues, worries of any kind and just need to know that someone cares. Do it for all of us, for nobody is immune. I hope to see this on the walls of all my friends just for moral support. I know some will! I did it for a friend and you can too!

CELL PHONE SAFETY!!!


A lady has now changed her habit of how she lists her names on her cell phone after her handbag was stolen. Her handbag, which contained her cell phone, credit card, wallet, etc., was stolen. 20 minutes later when she called her hubby, from a pay phone telling him what had happened, hubby says 'I received your text asking about our Pin number and I replied a little while ago.'
...When they rushed down to the bank, the bank staff told them all the money was already withdrawn. The thief had actually used the stolen cell phone to text 'hubby' in the contact list and got hold of the pin number. Within 20 minutes he had withdrawn all the money from their bank account.
Moral lesson:
a. Lock the keypad with a password if your phone allows it!
b. Do not disclose the relationship between you and the people in your contact list. Avoid using names like Home, Honey, Hubby, Sweetheart, Dad, Mom, etc.
c. And very importantly, when sensitive info is being asked through texts, CONFIRM by calling back.
d. Also, when you're being texted by friends or family to meet them somewhere unusual, be sure to call back to confirm that the message came from them. If you don't reach them, be very careful about going places to meet 'family and friends' who text you.

This meal is less than 150 calories so consider it a snack! And from start to finish takes about 15 minutes!

MAKES 4 SERVINGS
Ingredients:
Whitefish
4 5-6 whitefish fillets
2 tablespoons lemon
1 Tablespoon dried tarragon
1/4 teaspoon garlic powder
1/8 teaspoon sea salt
splash of chicken broth
Slaw:
4 cups shredded red cabbage
2 cups shredded fresh spinach
2 medium apples diced small
1 orange cut into supremes then in half
dried poppy seeds (optional)
1/2 cup apple cider vinegar
2 tablespoon lemon juice
1/4 teaspoon stevia or one small packet
Even though I am big believer in using good fats in your diets, I'm trying to minimize them due to calories. Feel free to add oil to any part of this if you like!
FISH:
1)Rinse and pat fillets dry. Place in a casserole dish and pour lemon juice on top.
2)Add tarragon, garlic a salt to both sides.
3)Cover and refrigerate for 1 hour or more
4)Heat nonstick pan and cook on medium for 3-4 minutes per side. Should it begin to stick add lemon juice from marinade or splash of chicken broth. I do one at a time to manage them, but you can do them all at the same time.
SLAW:
1)Shred slaw, chop apples and combine in a large bowl
2)In a small bowl, add vinegar and lemon juice then incorporate stevia
3)Pour dressing over slaw, sprinkle poppy seed and mix
4)Top with orange slices
A variation to add a bit of fat and more substance is to add 1/4-1/2 cup mayo to the vinegar and 1-2 avocados! YUM!

Toasted Sesame Ezekiel bread


1 teaspoon mayo (I use Veganaise) spread on one piece of bread
2 wedges laughing cow cheese spread on one piece of bread
5-6 pieces artichoke hearts
2 pieces romaine lettuce cut with a drizzle of E.V.O.O.

Oven Roasted Brussels Sprouts


Ingredients
1½ pounds Brussels sprouts
2 tablespoons olive oil
Kosher salt and freshly ground black pepper
6 bacon slices, cut into 1 inch pieces
Instructions
Preheat oven to 400 degrees.
Clean and trim Brussels sprouts and cutting any very large heads in half through the core.
Place the Brussels sprouts onto a large sheet pan (single layer) and drizzle with olive oil, tossing to evenly coat.
Sprinkle with salt and pepper. Then evenly sprinkle the bacon pieces over the Brussels sprouts.
Roast in the oven for 20 to 30 minutes, turning halfway through the cooking time, until golden and lightly caramelized.
Serve immediately. Enjoy

♥ Bacon Apple Tart ♥


1 can of Apple pie filling
1 package of bacon
granola for garnish
2 TBSP cinnamon sugar
Directions
Bake or fry the bacon till crisp.
Pour apple pie filling into the bowl and add the cinnamon sugar (make your own or use the already pre-made mixture) use your mixer to chop up the apple pie filling if you want the apple slices small like I did.
When the bacon is done line the cup cake or tart pan well with bacon and the pie filling on top and garnish with granola and crumbled bacon. Stick in a 350 degree oven for about 10 minutes.
Serve over ice cream. The tart does not hold together so it is best used as a topping.

Mexican Chicken (pollo mexicano)


3-4 boneless chicken breasts
1 can re-fried beans
1 can enchilada sauce, red or green
1 can green chilies
8 oz Mexican shredded cheese
chopped onion
chopped mushrooms
Toppings (optional)
chopped tomato
chopped lettuce
sour cream
brown rice
Pre-heat oven to 350 degrees.
Lay chicken breasts on bottom of 9x13 baking dish.
In bowl mix re-friend beans, chopped onions, enchilada sauce and green chilies all together until well mixed. Once all mixed up pour over chicken. Top with shredded cheese. Bake in oven for about 35-40 minutes. Let cool. Top with additional toppings if preferred. Enjoy!

Grilled Chicken Fajitas


¼ cup lime juice (about 3 limes)
1/4 cup extra-virgin olive oil
4 cloves garlic, minced
1 teaspoon salt, plus more for sprinkling
1/2 teaspoon freshly ground black pepper, plus more for sprinkling
4 boneless chicken breast halves, skinned (about 2 pounds) I used Chicken Thighs
4 scallions, tops removed
1 yellow onion, quartered
1 green bell pepper, halved, seeded
1 red bell pepper, halved, seeded
Shredded Cheddar, for serving
Large Portabella Mushrooms
Whisk the lime, oil, garlic, salt and pepper until combined in a small bowl. Place the chicken in a 1-gallon plastic bag. Pour half of the lime mixture over the chicken; turn to coat. Let the chicken marinate in the fridge for at least 2 hours and up to 8 hours.
Preheat the grill to medium-high heat. Remove the chicken from the lime mixture and bring to room temperature. Sprinkle each side of the chicken with salt and pepper. Grill the chicken until cooked through, about 7 minutes each side. Grill the vegetables until tender, turning frequently, about 10 minutes for peppers and mushrooms and about 15 minutes for the onions.
Transfer the chicken to a work surface and cover with aluminum foil. Set aside the chicken for 10 minutes. Meanwhile, slice the onions and peppers and mix together. Slice your chicken into strips. Serve with the Cheddar and sour cream.
I love this recipe. I throw everything onto my grill and it quick and easy! I top the mushrooms with the chicken mixture. You could also use a low carb tortilla.Top it with plain greek yogurt and cilantro

Caramel Popcorn


1/2 cup butter or margarine
1 cup brown sugar
1/2 cup light corn syrup
1/2 15 ounce can sweetened condensed milk
1/2 teaspoon vanilla
5 quarts popped corn
In saucepan, combine butter, sugar, and corn syrup. Stir well and bring to boiling over medium heat. Stir in condensed milk; simmer, stirring constantly, till mixture comes to soft ball stage (about 234 to 238 degrees). Stir in vanilla. Pour over popped corn and stir to coat. You can then form it into balls or just leave it. I pour mine out onto sheet pans.
This is a gooey caramel popcorn, not a crunchy one. I have never done one that you put in the oven. And I never use a candy thermometer so it may turn out less gooey if it were the right temp. lol I just wing it.

Oh how I love a good cookie! Don't these look "melt in your mouth" delicious?!!


SOFT SUGAR COOKIES
You can decorate them however you like!
Ingredients:
COOKIES
3/4 cup (170g) unsalted butter, slightly softened to room temperature
3/4 cup (150g) granulated sugar
1 large egg
2 teaspoons vanilla extract
1/4 teaspoon almond extract (makes the flavor outstanding)
2 and 1/4 cups (281g) all-purpose flour
1/2 teaspoon baking powder
Directions:
In a large bowl using a mixer, beat the butter until creamed and smooth - about 1 minute. Add the sugar and beat on high speed until light and fluffy, about 3 or 4 minutes. Scrape down the sides and bottom of the bowl as needed. Add the egg, vanilla, and almond extract and beat on high until fully combine, about 2 minutes. Blend well.
Whisk the flour and baking powder together in a medium bowl. Turn the mixer down to low and add about half of the flour mixture, beating until just barely combined. Add the rest of the flour and continue mixing until just combined. If the dough still seems too soft, you can add 1 Tablespoon more flour until it is a better consistency for rolling.
Divide the dough into 2 equal parts. Roll each portion out onto a piece of parchment to about 1/4″ thickness. Stack the pieces (with paper) onto a baking sheet and refrigerate for at least 1 hour and up to 1 day. Chilling is mandatory.
Once chilled, preheat oven to 350F degrees. Line 2-3 large baking sheets with parchment paper or a silicone baking mat. The amount of batches will depend on how large/small you cut your cookies. Remove one of the dough pieces from the refrigerator and using a cookie cutter, cut in shapes. Transfer the cut cookie dough to the prepared baking sheet. Re-roll the remaining dough and continue cutting until all is used.
Bake for 8-11 minutes, until very lightly colored on top and around the edges. Make sure you rotate the baking sheet halfway through bake time. My cookies took 9 minutes. Allow to cool on baking sheet for 5 minutes, then transfer to a wire rack to cool completely before icing. I always let mine cool overnight, just to be sure.
Make the icing and decorate the cooled cookies however you'd like. Once the icing has set, these cookies are great for gifts, sending, or munching on right away. I find they stay soft for about 5 days at room temperature.
Icing for DECORATING
Ingredients
Original recipe makes 1 dozen cookies' worth
1 cup confectioners' sugar
2 teaspoons milk
2 teaspoons light corn syrup
1/4 teaspoon almond extract
assorted food coloring
Directions
In a small bowl, stir together confectioners' sugar and milk until smooth. Beat in corn syrup and almond extract until icing is smooth and glossy. If icing is too thick, add more corn syrup.
Divide into separate bowls, and add food coloring to each to desired intensity. Dip cookies, or paint them with a brush.

Phyllis's Strawberry Cotton Candy Salad


Ingredients:
1 can sweetened condensed milk
2 cups crushed pineapple, well drained
1 cup strawberry pie filling
12 oz tub cool whip
8 large strawberries, halved
3/4 cup pecans, chopped

Easy Mexican Casserole


1 pound lean ground beef
1 can Ranch Style beans
1 10-12 ounce bag Doritos, crushed
1 can Ro-tel tomatoes
1 small onion, chopped
2 cups shredded cheddar cheese, divided
1 package taco seasoning
1 can cream of chicken soup
1/2 cup water
1/4 cup ketchup (optional)
sour cream and salsa for serving
Preheat oven to 325 degrees. In a skillet, brown meat and drain off fat. Stir in beans, tomatoes, onion, taco seasoning, soup, ketchup and water. Simmer over medium-low heat until everything is well combined and heated through.
Spray a 9×13 casserole dish. Put down a layer of crushed tortilla chips, followed by a layer of the meat/bean mixture, then half of the cheddar cheese. Repeat layers. Cover with foil and bake for 20-30 minutes, or until bubbly.
Let sit for 5-10 minutes before serving. Top with sour cream and salsa!

ADULT YUMMIES! Pumpkin Fire Pudding Shots
Ingredients:
Sm Pumpkin Spice Instant Pudding
¾ c Whole Milk
¾ c Fireball Whiskey
8 oz Cool Whip (Extra Creamy preferred but not required)
Directions:
Whisk Whole Milk & Instant Pudding together until as thick as it will get (1-2 minutes). Once it has thickened, add Liquor and whisk until all lumps and clumps are gone. Once the mixture is nice and smooth again, whisk in Cool Whip.
Fill almost ¾ of a 1 oz plastic shot cup with the mixture then cover and place in the freezer.
It does take several hours to set. For BEST results, I let them set overnight. May use little ice cream tester spoons when serving them.

I am so excited to be a guest on the show-- nervous though!!But getting the chance to share with the world how my life has changed, is a dream come true!!! Love Skinny Fiber!!
