INGREDIENTS
3 cups watermelon (cut into cubes or use melon baller)
2 cucumbers ( peeled, seeds removed, & cut into small cubes)
1/3 cup green onion (chopped)
1/2 cup cider vinegar
1 cup water
1/2 cup sugar ( or 1/4 cup honey, to make it healthier)
1 TBSP celery seed
Salt & Pepper to taste (optional)
DIRECTIONS
In medium bowl mix vinegar, water, sugar, and celery seed together; add green onions, stir and set aside.
In large bowl mix cucumbers and watermelon together. Pour marinade over, stir, and refrigerate for at least an hour (I let mine marinate overnight).
Stir before serving. ENJOY
