Eggs on a Cloud


I made this for Breakfast this morning and it was so yummy and very filling, this is quick breakfast to make for the kids to send them back to school with a yummy protein filled breakfast in their belly.

Ingredients
1 egg per cloud
salt (I used sea salt 3 twists)
Cheese (I used Colby Jack)

Directions
Preheat oven to 450 degrees
Crack the egg and separate the egg yolk from the egg white
Place them in a separate bowl.
Add salt and use your hand mixer to mix up to a meringue consistency, once you have soft peaks forming fold in your cheese.
***Be careful not to deflate the meringue. I also added ham and made just an egg white cloud, that is the first one in the photo.
Carefully spoon the meringue onto a greased cookie sheet place in the oven for 3 minutes. Pull it out and add the egg yolk and place back in the oven for 3 minutes.
Sprinkle with cheese again after adding the yolk (my family loves cheese)

*** Tip... If you get any yolk in the egg white it will not firm up to make a meringue, best thing to do if this happens is make scrambled eggs and start over, with a new egg.
