Meghan's Sloppy Joe Stuffed Peppers



1 pound ground turkey (or your choice of ground meat)
½ small onion minced
1 stalk celery chopped fine
1 clove garlic minced
1 cup tomato sauce
1 ½ teaspoons of Worcestershire sauce
1 ½ teaspoons of white vinegar
1 teaspoon of mustard
1 teaspoon of Splenda or sweetener of choice
2 large bell peppers 1/2 ‘d lengthwise
8 ounces of shredded cheddar cheese
Salt and pepper to taste

Brown the meat with the onion, celery, and garlic; drain.
Stir in ½ the can of tomato sauce, the Worcestershire sauce, white vinegar, mustard, and splenda. Simmer 8-10 minutes.
Stir in ½ of the cheese into the meat mixture until the cheese is melted.
Stuff the peppers with the meat and top with the remaining cheese.
Drizzle the remainder of the tomato sauce on top of the cheese. Bake at 350º for approximately 20 minutes or until cheese is hot and bubbly.
*optional – you can parboil the peppers for 3 minutes in water before cutting lengthwise to make the peppers more tender.
