Citrus Stir Fry!!
Ingredients:
1 Pd. Chicken, cubed or
1 pd. Shrimp, fresh or frozen , de veined and cleaned if fresh
3 Tbsp. Olive oil or Vegetable oil, divided
2 Tbsp. Garlic, divided
2 carrots, sliced thin
1/4 onion, sliced thin
1 zucchini, sliced1 yellow squash, sliced
2 cups mushrooms sliced
1/2 cup frozen peas
Salt an Pepper to taste
Sauce Ingredients:
3/4 cup Vegetable broth, or chicken broth
1/2 to 2/3 fresh orange juice, to taste
2 Tbsp. Soy sauce
1 Tbsp. sugar
2 Tbsp. cornstarch
Directions:
Mix the sauce ingredients together in a small sauce pan, and set aside.
In a large skillet, use 1 Tbsp. of oil and cook either the chicken or
shrimp on medium heat with 1 Tbsp. of minced garlic, and Salt and Pepper.
Cook them both until done, and set aside.
While Chicken or shrimp is cooking, start slicing veggies.
In another large skillet heat 2 Tbsp. of oil and add the onion and
carrots to cook for a few minutes. Then add the the other veggies,
cooking them all until just tender.( Additional veggies that could be
used, Broccoli Florets, snap peas, water chestnuts.)
While veggies are cooking, start the sauce cooking on medium heat stirring constantly to thicken, and not to let burn. Cook til just starting to bubble.
Combine the meat with the veggies, and pour sauce over all and
mix together well. Serve with Brown or white rice.
